Delicious and healthy corn chowder

During the colder months we are always looking for healthy meals to warm us up. The other day we made this delicious recipe and I thought I’d share it.

Prep time – 15 min

Cooking time – 30 min

Serves – 8

Ingredients

90g butter

2 finely chopped onions

2 crushed garlic cloves

3 teaspoons of cumin seeds

1L of vegetable stock

2 peeled and diced potatoes

600 g tinned creamed corn

2 cups of corn kennels (fresh or tinned)

3 tablespoons of parsley

grated cheddar cheese for the top

 

1. Heat the butter in a large saucepan. Add the onion and cook for 5 min or until golden. Add the garlic and cumin seeds and cook for 1 minute, stirring constantly. Add the stock then bring to the boil. Add the potato and reduce the heat to simmer for 10 minutes.

2. Add the creamed corn, corn kernels and parsley. Bring to the boil then simmer for 10 minutes.

3. Spoon into bowls then sprinkle cheese and parsely on top. Season to taste.

4. Enjoy
